Ingredients
- 100 g pistachios (ground)
- 25 g pistachios (chopped)
- 1 Vanilla bean
- 300 g heavy cream
- 80 g sugar
- 1 pinch salt
- 200 g double cream

Split the vanilla bean lengthwise, scrape out the seeds and warm them with the cream, sugar, and a pinch of salt while stirring until the sugar dissolves; do not boil. Remove from heat, let cool, then fold in the pistachios and double cream, removing the vanilla pod.

Transfer the mixture to a metal bowl, cover, and place it in the freezer for at least 3 hours.
