Ingredients
- 70 g crème double
- 80 ml whipping cream
- 1 egg yolk
- 1 tsp brown sugar
- 1 tsp Cornstarch
- 1 tbsp ginger syrup
- 1 drop vanilla aroma
- 1 tsp pistachios
- 1 piece pickled ginger (finely diced)
- 8 pieces mango (2 on each skewer)
- 100 g papaya flesh
- 100 g pineapple
- cookies (as desired)

Whip the crème double until creamy and refrigerate. Heat the cream in a pot just below boiling point. Whisk together the egg yolk, sugar, and cornstarch until smooth. Gradually pour the hot cream into the mixture while continuously whisking with a wooden spoon.

Return the mixture to the pot and continue whisking over medium heat until it boils. Cool the mixture in an ice bath while stirring. Fold in the crème double, ginger syrup, vanilla aroma, and pistachios. Transfer the blend to a stainless steel bowl and place it in the freezer for 30 minutes.

Stir in the diced ginger quickly, then freeze the ice cream for another 3 hours, occasionally stirring. Place the ice cream in the refrigerator 20 minutes before serving so it softens and is easier to portion. Serve on fruit skewers with cookies arranged around them.
