Quark Tzatziki

This quark tzatziki recipe from Spoonsparrow is especially high in protein thanks to the quark and pairs perfectly with vegetables, meat, bread, and potatoes.

Ingredients

  • 2 small cucumbers
  • Salt
  • 500 g Low-fat quark
  • 100 g whipping cream
  • 3 Garlic cloves
  • 1 tbsp White Wine Vinegar
  • 2 tbsp olive oil
  • 2 tbsp chopped dill

Instructions

    Peel, halve, seed, and grate the cucumbers. Mix with 1 tsp salt and let sit for 10 minutes. Rinse and drain well.

    Whisk quark and cream until smooth, then fold in the cucumber mixture. Peel, finely chop garlic, and stir into the quark blend. Add vinegar and olive oil, season with salt, and let the mixture rest briefly.

    Wash, dry, and finely chop dill; fold it into the tzatziki just before serving.
