Bulgur Salad Without Tomato Paste

Ingredients
- 300 ml Vegetable broth
- 200 g bulgur (hard wheat semolina)
- 4 tomatoes
- 1 Red Onion
- 1 bunch flat-leaf parsley
- 1 bunch Coriander
- 3 tbsp Lemon juice
- 5 tbsp olive oil
- Salt
- Pepper
Instructions

Bring the broth to a boil in a pot, stir in the bulgur and simmer over low heat for about 10 minutes. Fluff the bulgur with a fork and let it cool.

Wash the tomatoes, halve them, remove seeds and dice finely. Peel the onion, halve it and slice into thin strips. Wash the parsley and coriander, shake dry and roughly chop the leaves.

For the dressing combine olive oil and lemon juice and season with salt and pepper. Mix the tomatoes, onions and dressing into the cooked bulgur. Let the bulgur salad without tomato paste rest for 20 minutes before serving.
