Antipasti Buffet

How about a small antipasto buffet as an appetizer? Bruschetta, olives and salami – the recipe is available on Spoonsparrow.

Ingredients

  • 8 ripe tomatoes
  • 1 small onion
  • 2 Garlic cloves
  • 2 stems basil
  • 1 tbsp white balsamic vinegar
  • 2 tbsp olive oil
  • a pinch salt
  • 8 slices ciabatta
  • 170 g marinated olives
  • 50 g Italian salami

Instructions

    Wash the tomatoes, quarter them, remove seeds and dice the flesh. In a bowl combine with finely chopped onion and garlic.

    Wash basil, shake dry, roughly chop leaves and mix with vinegar, oil, and a pinch of salt into the tomato mixture; season and let rest for about 20 minutes.

    Toast ciabatta slices, place olives and salami in separate bowls, and serve together with the bruschetta.
