Quark Tart
A perfect after-work snack – quick to make, healthy and with fresh ingredients.
Ingredients
- 150 g flour
- 0.5 packet Baking powder
- 1 tbsp sugar
- 125 g low-fat quark
- 2 tbsp plant oil and milk each
- 250 g buttermilk (quark)
- 4 tbsp milk
- 30 g sugar
- 1 packet vanilla sugar
- 1 egg (size M)','12 pitted dried plums','2 tbsp raw sugar

Mix flour, baking powder and sugar. Add quark, milk and oil and combine with the dough hooks of a hand mixer, then knead by hand into a smooth dough. Roll the dough thinly on a sheet of parchment paper to the size of a tart or pie tin (about 24‑26 cm diameter). Brush the tin with oil. Place the dough in the tin and press it into the edges with a fork. Prick the base several times.

For the filling, whisk together buttermilk quark, milk, sugar, vanilla sugar and egg. Spread the quark mixture over the tart crust and top with the dried plums. Bake in a preheated oven at 190 °C (gas: level 3, convection: 170 °C) for 20‑25 minutes.

Sprinkle the tart with brown sugar and briefly broil on the upper rack under the preheated grill.
