Ingredients

  • 3 egg yolks
  • 30 g powdered sugar
  • Salt
  • vanilla bean
  • 10 ml rum
  • 0.5 tbsp cornstarch
  • 200 g quark
  • 40 g whipping cream
  • 3 egg whites
  • 2 tbsp sugar
  • butter (for the cups)
  • sugar (for the cups)
  • powdered sugar (to dust)

Instructions

    Add egg yolks and powdered sugar to a metal mixing bowl and whisk over a hot water bath until frothy.

    Add a pinch of salt, scraped vanilla bean, cornstarch, rum, cream, and quark. Whisk well with a whisk.

    Beat egg whites with sugar until stiff peaks form, then fold gently into the mixture.

    Fill buttered and sugared cups about 1 cm below the rim. Place cups in a baking dish, pour hot water over them, and bake at 220°C for about 25–30 minutes in a preheated oven using a water bath.

    Remove, dust with powdered sugar, and serve immediately.
