Ingredients

  • 2 mandarins
  • 2 yellow grapefruits (or 1/2 pomelo)
  • 600 g quark
  • 40 ml coconut liqueur
  • 2 tbsp coconut flakes
  • 3 tbsp honey
  • 6 tbsp fresh coconut chips
  • 100 ml whipped cream

    Peel the mandarins, separate the pieces and remove all white membranes. Peel the grapefruits with a sharp knife, cut out the segments between the membranes and chop them small. Squeeze the remaining membranes for juice.

    Mix the quark with grapefruit juice, liqueur, coconut flakes and honey. In four glasses layer alternately mandarins, quark mixture and grapefruits, reserving some mandarin pieces for garnish. Roast the coconut chips in a dry pan until lightly brown, then remove and cool. While that stews, whip the cream stiffly and spoon onto the glasses. Garnish with remaining mandarins and sprinkle with roasted coconut chips before serving.
