Ingredients

  • 500 g low‑fat quark
  • 2 Eggs
  • 400 g flour
  • 1 pinch salt
  • 16 plum fruit (Zwetschgen)
  • 16 pieces cube sugar
  • 20 g butter
  • 8 tbsp chopped hazelnuts
  • 100 g butter
  • 1 packet vanilla sugar
  • fresh plums (halved, pitted)
  • powdered sugar

Instructions

    Drain the quark well and place it in a bowl. Mix in eggs and flour until the dough is relatively firm. Divide the dough into 16 portions and flatten each piece slightly. Wash the plums, pat dry, and pit them without halving. Place one cube of sugar in the center of each portion and fold it closed.

    Place the plum‑filled dough pieces on a tray and shape them into dumplings. Bring plenty of salted water to a boil and let the dumplings simmer for 15 minutes over low heat. When they float, remove them with a slotted spoon and drain well.

    Toast the hazelnuts in 20 g butter. Melt the remaining butter. Arrange the dumplings on plates, sprinkle with hazelnuts, drizzle with melted butter, and dust with vanilla sugar. Add fresh plums sprinkled with powdered sugar as garnish.
