Tomato Quiche

Ingredients

  • 150 g flour
  • 1 pinch salt
  • 100 g cold butter
  • 1 egg
  • soft butter (for the pan)
  • flour (for working)
  • 300 g cherry tomatoes
  • 200 ml whipping cream
  • 100 g crème fraîche
  • 60 g grated Parmesan
  • 3 eggs
  • Salt
  • pepper (from grinder)
  • nutmeg

Instructions

    Sift flour onto a work surface, mix with salt and create a well in the center. Cut cold butter into small pieces, distribute around the well, add the egg to the center and cut all ingredients together with a knife until small dough crumbs form. Quickly knead into dough with hands, shape into a ball, wrap in cling film and chill for about 30 minutes.

    Preheat oven to 200°C (400°F) with upper and lower heat. Butter the tart pan.

    Wash tomatoes and halve them.

    Roll out dough on floured surface and line the tart pan. Arrange tomatoes on top. Whisk cream, crème fraîche, Parmesan, and eggs together. Season with salt, pepper, and nutmeg. Pour over tomatoes and bake in preheated oven for about 40 minutes.

    Remove from oven, let cool briefly and serve warm or cooled, sliced into pieces.
