Ingredients
- 200 g quark (20 %)
- 3 egg yolks
- vanilla pods
- untreated lemons (zest)
- 4 egg whites
- 50 g sugar
- butter (for the molds)
- 1 tsp Cornstarch
- powdered sugar
- raspberries
- mint

Butter four small soufflé molds and dust with sugar, then place in freezer.

Whisk quark, egg yolks, vanilla essence, and lemon zest together. Beat egg whites with sugar until stiff peaks form, then fold in cornstarch. Gently fold the meringue into the yolk mixture. Fill the prepared molds with batter. Preheat oven to 200°C and bake soufflés for about 20 minutes.

Serve soufflés on dessert plates, dust with powdered sugar, and garnish with raspberries and mint.
