Quark Dumplings with Plum Sauce

Ingredients

  • 500 g low‑fat quark
  • 200 g spelt flour (Type 630)
  • 200 g spelt whole‑grain flour
  • 1 egg
  • Salt
  • 60 g Honey (4 tbsp)
  • 30 g butter (room temperature, 2 tbsp)
  • 50 g ground hazelnuts
  • 500 g plums
  • 150 ml grape juice
  • 1 tsp ground cinnamon
  • 1 pinch cloves powder

Instructions

    Mix quark with both flours, egg, ½ tsp salt, honey and 1 tbsp butter into a smooth dough. Roll the dough on a floured surface into a 5 cm thick log; cut the log into 2 cm wide slices and shape each slice into small dumplings.

    Cook the dumplings in boiling water until they rise to the surface. Remove them and drain.

    Meanwhile, toast hazelnuts in a dry pan over medium heat until fragrant.

    For the sauce, wash, halve and pit the plums. Heat remaining butter in a pan. Sauté the plums over medium heat. Add 2 tbsp honey and lightly caramelize. Deglaze with grape juice, add spices, simmer until reduced and season to taste.

    Toss the quark dumplings in the hazelnuts. Divide the dumplings and plum sauce onto four plates and serve.
