Ingredients

  • 500 g low‑fat quark
  • 3 eggs
  • 1 packet vanilla sugar
  • 5 tbsp flour
  • Salt
  • 60 g semolina
  • 60 g cornflakes
  • 50 g butter
  • 1 tsp sugar
  • 0.5 tsp cinnamon powder
  • plum compote (homemade or jarred)
  • 700 g plums
  • 60 g sugar
  • cinnamon (½ tsp each)
  • clove powder (½ tsp each)
  • 20 ml rum

Instructions

    Whisk eggs and vanilla sugar, then add quark, flour, salt, and semolina; mix well.

    Bring a large pot of water with 2 tsp sugar to a boil, then reduce to medium heat. Using two damp spoons, shape lumps from the quark mixture and drop them into the simmering water; stop boiling once added. When the lumps rise to the surface they are done.

    Crush cornflakes with a rolling pin and toast them lightly in a pan with butter. Arrange the finished quark lumps on plates and sprinkle each with some toasted cornflakes. Mix sugar with cinnamon, dust the lumps with this mixture, and serve immediately with plum compote.

    Wash plums, halve, pit, and cut into wedges; then simmer with sugar, cinnamon, clove powder, and rum in a pot over medium heat for 8–10 minutes until soft, remove from heat, and let cool.
