Quark Rhubarb Gratin

Ingredients

  • 600 g rhubarb
  • 3 eggs
  • 1 pinch salt
  • 400 g Low-fat quark
  • 80 g sugar
  • 1 packet vanilla pudding powder
  • 200 ml freshly squeezed orange juice
  • 100 g digestive biscuits
  • powdered sugar

    Preheat the oven to 180°C (356°F).

    Wash the rhubarb and cut it into unpeeled pieces about 2 cm long. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. In a bowl, whisk the yolks with quark, sugar, and pudding powder until smooth. Gently fold the beaten egg whites into the mixture using a whisk. Line the bottom of a shallow baking dish (about 2.5 liters capacity) with digestive biscuits and drizzle them evenly with orange juice. Pour half of the quark mixture into the dish. Arrange the rhubarb on top, then pour the remaining quark mixture over it. Bake in the preheated oven for 25-30 minutes. Immediately after baking, dust with powdered sugar and serve warm.
