Coconut Macaroons with Chocolate

- 100 g marzipan base
- 1 Egg white
- 100 g shredded coconut
- 50 g sugar
- a pinch of salt
- Lemon juice
- 2 tsp grated lemon zest
- butter for greasing the baking sheet
- 100 g dark couverture chocolate

Preheat the oven to 160°C.

Grease a baking sheet with butter.

Beat the egg white until stiff peaks form. Gradually add salt, sugar, lemon juice and zest, continuing to beat until the mixture is very stiff. Finely chop the marzipan, mix it with the shredded coconut, and fold both into the beaten egg whites gently. Using two damp teaspoons, scoop small mounds onto the baking sheet spaced apart. Bake on the middle rack for about 25 minutes. Remove and let cool.

For decoration, break the couverture chocolate into pieces and melt in a double boiler.

Dip half of each macaron into the melted chocolate, allow excess to drip off, and let them dry.
