Quark Mousse with Kiwis

Ingredients
- 6 sheets gelatin
- 200 ml whipping cream
- 40 g sugar
- 2 tbsp vanilla sugar
- 1 piece untreated lemon peel
- 400 g quark (fresh cheese)
- 1 Egg white
- 1 splash Lemon juice
- mint (for garnish)

Spray 12 small oval molds with non-stick spray.

Soak the gelatin in cold water. Bring 100 ml cream to a boil with sugar, vanilla sugar and lemon peel, then remove from heat. Squeeze out excess water from gelatin, add it to hot cream and dissolve. Let cool while stirring occasionally, then remove lemon peel again. Whisk quark until creamy and fold in 2-3 tbsp of the cream mixture. Mix this into the remaining quark. Beat egg white with lemon juice until stiff peaks form. Also beat the remaining cream until stiff peaks form. Just before the mousse starts to set, fold in the whipped cream and beaten egg whites, then pour into molds. Cover and refrigerate for at least 4 hours.

Peel kiwis, quarter them lengthwise and slice finely.

Remove the quark mousse from molds onto plates, arrange kiwi slices on top, garnish with mint and serve.
