Quark Cake

Ingredients
- 3 eggs
- 100 g sugar
- 50 g flour
- 50 g cornstarch
- 1 tsp Baking powder
- 250 ml milk
- 2 tsp grated lemon zest
- 250 g sugar
- 2 tsp lemon juice
- 4 egg yolks
- 8 sheets white gelatin
- 500 g whipping cream
- 500 g Low-fat quark
- powdered sugar (for dusting)
- butter (for the pan)
- flour (for the pan)

Grease the pan and dust with flour. Beat the eggs with sugar until fluffy. Sift in flour, cornstarch, and baking powder, fold into mixture. Spread batter evenly in pan. Bake in preheated oven at 200°C for about 35 minutes until golden yellow. Let cool.

For the filling, simmer milk with lemon zest, sugar, and egg yolks briefly while stirring. Remove from heat. Soak gelatin sheets in cold water, squeeze out excess, then stir into hot milk to dissolve. Chill mixture slightly until it thickens. Whip cream stiffly. Gradually fold quark and whipped cream into the custard, seasoning with lemon juice. Slice sponge horizontally once. Place one cake layer back into the springform. Line the edge with a wide strip of parchment paper. Pour in quark mixture and smooth top. Place second cake layer on filling. Chill for at least 2 hours before serving dusted with powdered sugar.
