Quark Gratin
Looking for something sweet as a main course? This quark gratin with fresh berries from Spoonsparrow is just right!
Ingredients
- 300 g mixed berries (e.g., strawberries, raspberries, blackberries)
- 20 g butter
- 1 Organic lemon
- 1 egg
- 100 g low-fat quark
- 2 tbsp Raw cane sugar
- 1 tsp Cornstarch
- Salt

Wash and clean the berries carefully. Halve the strawberries. Melt the butter and let it cool slightly.

Rinse the lemon hot, dry it, and grate 1 tsp of zest finely. Separate the egg. Mix the lemon zest with quark, yolk, butter, 1 tbsp raw cane sugar, and cornstarch.

Beat the egg white with a pinch of salt, gradually add the remaining sugar, and whip into stiff peaks.

Gently fold the meringue into the quark mixture. Then spoon the quark cream onto two deep plates or into a gratin dish and smooth it out.

Spread the berries over the quark base. Place the plates on a baking sheet and bake under the preheated oven grill on the lowest rack for 4–5 minutes until golden brown. Serve immediately.
