Ingredients

  • 8 apricots
  • 1 handful of raspberries
  • 4 sprigs of currants
  • 500 g Low-fat quark
  • 2 Eggs
  • 2 packets vanilla sugar
  • 30 g cornstarch
  • 1 tbsp almond slivers

Instructions

    Wash the fruit, halve and pit the apricots, quarter each half. Gently wash the raspberries and pat dry. Wash the currants.

    Separate the eggs; beat the whites until stiff peaks form. Whisk the quark with cornstarch, sugar, and yolks until smooth, then fold in the meringue.

    Divide the quark mixture into four ramekins, top with fruit, press slightly down, and bake in a preheated oven at 200°C for about 15-20 minutes.

    Serve hot, sprinkled with almonds.
