Berry Crumble with Rhubarb and Elderflower

- 200 ml apple juice
- 200 g Raspberries
- 250 g strawberries
- 150 g rhubarb
- 2 tbsp lemon juice
- 2 tbsp vanilla sugar
- 150 ml elderflower syrup
- 1 tbsp Cornstarch
- elderflower (for garnish)

Take 3-4 tablespoons from the apple juice, pour the rest into a pot. Rinse the berries, rinse if necessary, and clean them. Cut strawberries into pieces. Wash, trim, and cut rhubarb into small pieces.

Bring the apple juice with lemon juice, vanilla sugar, and syrup to a boil. Add rhubarb, raspberries, and strawberries; simmer gently for 5-10 minutes while stirring until fruits begin to break down. Whisk cornstarch with remaining apple juice until smooth, then stir in to lightly thicken the crumble. Let cool slightly, then pour into glasses as desired and chill.
