Quark Cake with Mandarins and Crunchy Base

Ingredients
- 200 g oatmeal mix
- 60 g softened butter
- 1 packet instant gelatin (lemon flavor)
- 4 sheets gelatin
- 200 g Low-fat quark
- 200 g yogurt (3.5% fat)
- 1 packet vanilla sugar
- 120 g sugar
- 250 g whipping cream
- 628 ml mandarins (2 cans)
- mint leaves for garnish

Melt the butter, mix in the oatmeal, and press the mixture into a springform pan lined with parchment paper. Chill in the refrigerator for about 1 hour until firm.

Soak the gelatin sheets in cold water. Drain the mandarin oranges. Boil 150 ml of juice, stir in the instant gelatin, remove from heat, and let cool slightly. Then dissolve the soaked, well-squeezed gelatin into the still-warm liquid while stirring, and allow the mixture to cool completely until it starts to set. In the meantime, whisk the quark with yogurt, vanilla sugar, and sugar. Whip the cream stiffly. Fold the slightly runny gelatin into the quark mixture and fold in the whipped cream. Set aside some mandarin slices for garnish; fold the remaining mandarins into the cream. Spread the mixture over the oat base in the springform pan. Chill in the refrigerator for about 3 hours until firm. Remove, loosen from the mold, decorate with the remaining mandarin slices and mint leaves, and cut into 12 pieces.
