Yogurt Fig Cake

Ingredients

  • 250 g yogurt
  • 2 Eggs
  • 2 tbsp honey
  • 1 vanilla pod
  • 1 pinch salt
  • 1 tsp grated organic orange zest
  • 5 tbsp butter
  • 250 g spelt semolina
  • 2 tsp Baking powder
  • 6 figs
  • 1 tbsp Whole Grain Breadcrumbs

Instructions

    Melt 4 tbsp of butter and let it cool slightly. Split the vanilla pod lengthwise and scrape out the seeds. Mix yogurt with eggs, honey, vanilla seeds, salt, orange zest, and melted butter.

    Combine semolina with baking powder and fold into the wet mixture. Grease the pan with remaining butter and dust with breadcrumbs. Pour batter into pan. Wash figs, halve them, and arrange on top of the batter, pressing slightly. Bake in a preheated oven at 180°C (160°C fan or gas level 2-3) for about 50 minutes until golden brown. Remove and let cool in the pan.
