- 500 g flour
- 3 yolks
- 250 g softened butter
- 6 tbsp heavy cream (at least 30% fat)
- 1 pinch salt
- 125 g sugar
- 4 tbsp cocoa powder
- 1 packet baking powder
- 5 eggs
- 600 g low-fat quark
- 150 g Sour cream
- 100 g yogurt (0.3% fat)
- 1 untreated lemon (zest)
- 2 packets vanilla pudding mix
- 100 g sugar
- powdered sugar (for dusting)

Combine all dough ingredients in a bowl and knead with the paddle attachment of an electric mixer, adding a little by hand if needed. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Preheat the oven to 200 °C (400 °F) fan‑heated. Separate the eggs; whisk the yolks with quark, sour cream, yogurt, lemon zest, and pudding mix until smooth. Beat the egg whites with sugar into a very stiff foam and fold into the quark mixture.

Divide the dough into two equal portions and roll each to fit a baking tray. Place one portion on parchment paper, spread the quark filling over it, then top with the second dough layer. Bake in the preheated oven for 40–50 minutes. Remove from the oven, let cool, dust lightly with powdered sugar if desired, cut into pieces and serve.
