Ingredients

  • 200 g spelt flour type 1050 (+ 1 tbsp for working)
  • 0.5 cube fresh yeast
  • 90 ml lukewarm water
  • 3 tbsp olive oil
  • Salt
  • 200 ml pizza tomatoes
  • 0.5 tsp Italian herbs
  • 1 clove garlic (chopped)
  • Salt
  • pepper (ground)
  • 1 tbsp Olive Oil
  • 80 g spinach (chopped)
  • 50 g pizza cheese (grated)
  • 150 g mozzarella

Instructions

    Sift the flour into a bowl, press a well in the center. Crumble the yeast into some water and pour it into the well. Sprinkle with flour and cover for about 20 minutes to rise. Add the remaining water with salt and oil, knead into a smooth dough. Cover and let rise again at a warm spot for about 30 more minutes.

    Knead the dough once more and divide into 12 pieces. On a floured work surface roll each piece into a small pizza shape and place on baking trays lined with parchment paper. Spread pizza tomatoes over them, season with salt and pepper, and sprinkle with garlic. Blanch the spinach, drain and squeeze out excess liquid.

    Slice the mozzarella and distribute it along with the grated cheese over the pizzas. Tear the spinach apart and spread it over the pizzas. Drizzle a little oil on top and bake in a preheated oven at 220°C (fan) for about 15 minutes. Serve the vegetarian mini pizza hot.
