Punsch Squares with Cherry

- 4 eggs
- 100 g sugar
- 50 g flour
- 50 g cornstarch
- 1 tsp Baking powder
- 4 tbsp rum
- 40 g jam
- 100 ml Orange Juice
- 40 g sugar
- 30 g Dark chocolate
- 200 g sugar
- 250 g powdered sugar
- 3 tbsp punsch or rum
- red food coloring
- 5 cherry toppings

Preheat the oven to 200°C (400°F) with upper and lower heat.

Separate the eggs. Beat the egg whites with half of the sugar until stiff peaks form. Whisk the yolks with the remaining sugar, then fold in the beaten whites. Sift the flour together with the cornstarch and baking powder over the mixture and fold gently. Spread the batter onto a parchment-lined tray to a thickness about finger‑deep. Bake for approximately 12 minutes. Transfer the sponge to a cooling rack, remove the paper immediately, and let it cool.

Cut the cooled dough into 20 squares of about 4 cm each. Crumble the remaining sponge and mix with rum, jam, and sugar. Melt the chocolate and stir into the mixture. Spread half of the sponge squares with the filling and place the remaining pieces on top.

Cook the sugar with 125 ml water until it forms threads when dripped from a spoon. Stir this into powdered sugar until a thick paste forms. Dilute with punsch or rum, whisk vigorously, and color with one or two drops of food coloring to pink. Coat the punsch squares with this mixture, place them in paper molds, decorate with halved cherries, and let set.
