Ingredients

  • 1000 g pumpkin (asparagus type)
  • 2 tbsp sunflower oil
  • 1 Garlic clove
  • 2 large tomatoes
  • 1 apple
  • 3 tbsp white balsamic vinegar
  • 5 tbsp grape seed oil
  • 1 tsp Mustard
  • 1 tsp chopped parsley
  • Basil
  • marjoram
  • 1 small finely chopped onion
  • 100 g Arugula
  • Salt
  • Pepper

    Peel, core, and cut the pumpkin into 1 cm thick pieces about 20 cm long. Boil in salted water for 5 minutes. Remove. Briefly sauté in sunflower oil, press in garlic, season with salt and pepper, then set aside.

    Heat tomatoes briefly, peel, quarter, remove seeds, and dice finely. Peel the apple, remove core, and dice similarly. Combine vinegar, mustard, onion, tomato and apple cubes, oil, and herbs to make a vinaigrette. Season with salt and pepper. Arrange arugula leaves in the center of plates and place pumpkin sticks on top, drizzling with the vinaigrette.
