Ingredients
- 750 g pumpkin flesh
- 250 g Potatoes
- 2 carrots
- 2 stalks leeks
- 2 onions
- 6 tbsp oil
- 2 tbsp Curry Powder
- 2 tsp flour
- 500 ml vegetable broth
- 400 ml heavy cream
- Salt
- ground pepper
- a splash of lemon juice
- 2 tsp pink berries

Cut the pumpkin into small strips. Peel, wash, and cut the potatoes and carrots into pieces.

Clean, wash, and slice the leeks into rings. Peel and dice the onions.

Heat oil in a large pot. Sauté the prepared ingredients except the leeks. Sprinkle with curry powder and flour, then pour in the broth. Cover and simmer for 30 minutes.

Add the cream and leeks. Let it gently simmer for another 10 minutes. Season with salt, pepper, and lemon juice. Serve sprinkled with pink berries.
