Pretzel-Paprika Skillet

Ingredients
- 2 old-fashioned pretzels
- 1 onion
- 2 yellow bell peppers
- 4 red bell pepper halves
- 250 g Oyster mushrooms
- 3 tbsp butter
- Salt
- ground black pepper
- 6 Eggs
- 4 tbsp heavy cream
- 2 tbsp freshly chopped parsley
- 2 tbsp chives

Soak the pretzels in water to reduce salt, then slice them. Peel and finely dice the onion. Wash, halve, clean, and cut the bell peppers into strips. Clean the mushrooms and slice them similarly.

In a large hot pan, brown the pretzel slices in 2 tbsp butter until golden. Remove and drain on paper towels. In the remaining butter, sauté the onions and mushrooms for 1-2 minutes. Add the pepper strips and cook for another 2-3 minutes, seasoning with salt and pepper. While cooking, whisk together eggs, cream, and parsley. Pour this mixture over the vegetables, stirring until it thickens. Fold in the pretzels and adjust seasoning.

Serve in bowls, sprinkled with chives, alongside a fresh salad.
