Ingredients
- 1 kg artichokes
- 1 lemon (juice)
- 150 ml wine vinegar
- 1 tbsp salt
- 1 tbsp sugar
- 1 tsp peppercorns
- 1 bay leaf
- 2 tbsp freshly chopped herbs (e.g., oregano, rosemary, thyme)
- 400 ml olive oil

Clean the artichokes by trimming hard outer leaves and tips; remove any tough stems if necessary. Cut off the stem. Immediately place them in cold water with lemon juice.

Boil vinegar with about 300 ml water, salt, sugar, peppercorns, and bay leaf. Simmer the artichokes in this mixture for approximately 25 minutes until tender.

Remove from the broth and let cool. Mix in the herbs and distribute among jars. Pour olive oil over to cover everything well, then seal tightly.
