Pumpkin Tomato Gratin

Ingredients
- 1 kg pumpkin flesh (without seeds and skin)
- 750 g ripe tomatoes
- 3 Garlic cloves
- 2 tbsp chopped parsley
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 40 g breadcrumbs
- 30 g Butter

Cut the pumpkin flesh into strips about 7 cm long and blanch in boiling salted water for about 4 minutes, then drain and set aside.

Blanch the tomatoes, peel them, and cut into pieces. Peel the garlic and finely chop it.

Heat 3 tbsp olive oil in a large pan and sauté the pumpkin, turning occasionally, until translucent; transfer to a shallow baking dish.

Add the remaining oil to the pan and quickly sauté the garlic. Add the tomatoes and half of the parsley, stirring, then spread over the pumpkin pieces.

Mix the remaining parsley with the breadcrumbs and sprinkle over the gratin. Dot with small butter pats and bake in a preheated oven at 200°C for about 25 minutes.
