Pumpkin seed quark: Pumpkin seeds provide approx. 30% protein, and the quark also contributes plenty of protein. A healthy spread for bread!
Ingredients
- 40 g Pumpkin seeds
- 1 Garlic clove
- 0.5 bunch Chives
- 200 g Low-fat quark
- 1 tbsp Pumpkin seed oil (preferably from Styria)
- Salt
- Pepper
Instructions

Toast the pumpkin seeds in a pan without fat, stirring constantly, until they smell fragrant and start to pop. Remove from heat and let cool.

Set aside about 1/4 of the pumpkin seeds for garnish, and chop the remaining seeds. Peel and chop the garlic as well. Wash, dry, and finely chop the chives.

Mix the chopped pumpkin seeds, garlic, and chives in a bowl with the quark, and stir everything together with the pumpkin seed oil, salt, and pepper. Serve pumpkin seed quark with whole grain bread - or also with boiled potatoes.
