Spelt Pancake Basic Recipe

Ingredients
- 125 g finely ground spelt flour
- 325 ml milk (1.5% fat)
- 3 eggs
- Salt
- 2 tbsp Rapeseed oil

Sift the spelt flour into a bowl and stir with the milk until smooth. Let it rest for 30 minutes.

Whisk the eggs with a little salt, add together with 1 tbsp of oil to the flour and mix. If lumps have formed, strain the batter through a sieve as a precaution.

Heat a large pan (26 cm diameter), grease with a little oil.

Pour about 1/8 of the pancake batter into the pan and bake a golden brown pancake on both sides. Bake 8 thin pancakes one after another.

Stack the spelt pancakes on a plate, let them cool completely or eat them immediately warm.
