- 175 g Potatoes (2 Potatoes)
- 250 g Zucchini (1 Zucchini)
- 1 Garlic clove
- 2 onions
- 45 g Serrano Ham (3 slices)
- 2 tbsp olive oil
- Salt
- Pepper
- 4 eggs

Wash the potatoes and boil them with the skin on for about 15-20 minutes. Then peel and cut into 1 cm cubes. While the potatoes are cooking, wash the zucchini, trim it, and cut it into 1 cm cubes. Peel and finely dice the garlic and onions.

Cut the ham into thin strips.

Heat the oil in a non-stick pan and sauté the onions and garlic over medium heat for 1 minute until translucent. Add the potato and zucchini cubes and fry for 4 minutes, stirring until golden brown. Season with salt and pepper.

Whisk the eggs in a bowl and season lightly with salt and pepper. Pour them into the pan, sprinkle with ham strips, and let them set slightly over 3 minutes with gentle stirring.

Flip the tortilla: Ideally, flip it onto a plate and then back into the pan. Let it set for another 4 minutes. Serve the tortilla cut into pieces.
