Grilled Melon with Cheese

Ingredients

  • 300 g watermelon flesh (seedless)
  • 20 g pine nuts
  • 200 g goat soft cheese roll (min 40% fat in total)
  • 1 small red chili pepper
  • 3 tbsp olive oil
  • 1 tsp Honey
  • Salt
  • Pepper

Instructions

    Cut the watermelon flesh into small triangles and skewer 2–3 on each stick. Grill over high heat for about 2 minutes per side.

    Roast the pine nuts in a small fire‑proof bowl or on foil on the grill until golden brown.

    Slice the goat cheese into rounds and arrange on four small glasses. Halve the chili pepper lengthwise, deseed, wash and chop. Mix the chili with olive oil, honey, salt and pepper and drizzle over the cheese. Place the melon skewers on top and sprinkle everything with pine nuts before serving.
