Spelt Flour Buchteln

Ingredients

  • 500 g spelt flour
  • 200 ml milk
  • 20 g yeast
  • 1 egg
  • 60 g sugar
  • 50 g butter
  • grated lemon zest
  • 60 g butter (for the dough)
  • powdered sugar (for dusting)

Instructions

    Sift flour into a bowl and make a well in the center. Mix yeast with 1 tsp sugar, some lukewarm milk, and a little flour to form a thick starter. Pour it into the flour well, sprinkle a bit of flour on top, cover and let rise for about 30 minutes. Then add softened butter, remaining sugar, and lemon zest around the edge, pour the rest of the milk with the egg into the center, and from the middle incorporate the flour with the remaining ingredients. Knead the dough until it releases from the bowl. Cover and let rise for another 30 minutes. Knead again and cut out dumpling-sized pieces with a tablespoon. Brush the dough with melted butter and roll the pieces in it. Place them side by side and let rise for 30 minutes.

    Preheat the oven to 180°C fan-forced and bake for about 25-30 minutes until golden brown. Remove, allow to cool slightly, then serve warm dusted with powdered sugar.
