Ingredients
- 1.5 kg pumpkin
- 500 g pectin sugar (2:1)
- 20 g fresh ginger (1 piece)
- 1 lemon
- 1 orange
- 100 ml apple juice
- 1 packet citric acid

Peel the pumpkin and cut the flesh (about 1 kg) into thin strips. Peel the ginger root and cut it into small pieces. Halve the lemon and orange and squeeze their juices.

Add the lemon, orange, and apple juices along with the ginger to the pumpkin and bring everything to a boil while stirring occasionally. Cook the pumpkin until soft, then stir in the pectin sugar and citric acid and let the mixture cook for 4 minutes more, stirring frequently to prevent burning!

Pour the hot jam into rinsed jars and seal immediately.
