Ingredients

  • 1 pumpkin (about 1.3 kg)
  • 300 ml orange juice
  • 200 g kumquats
  • 1 kg gelatin sugar (1:1)
  • 0.5 tsp cinnamon

    Halve the pumpkin, remove seeds and strings, peel off the hard skin, and dice the flesh; you should have about 800 g of fruit. Combine with the orange juice in a large pot and cook over medium heat covered for about 15-20 minutes until tender. Rinse the kumquats hot, slice them, and add to the pumpkin after 5 minutes of cooking. Then puree.

    Stir in the sugar and cinnamon and simmer for about 4 minutes while stirring constantly. Perform a gel test, then fill jars completely. Seal tightly and leave upside down for about 10 minutes. Flip and package as desired with cinnamon, Christmas baubles, and satin ribbons.
