Ingredients

  • 500 g pumpkin flesh
  • 3 Grapefruits
  • 500 g gelatin sugar (2:1)
  • mint
  • 1 packet citric acid

Instructions

    Dice the pumpkin flesh into small cubes. Juice 2 grapefruits. Weigh the pumpkin and grapefruit juice. Mix in a 2-1 ratio with the gelatin sugar in a pot and let it infuse for 30 minutes.

    Heat over medium heat for 5-8 minutes, but do not boil. Peel the third grapefruit with its white rind thickly and filet. Rinse the mint, shake dry, and pluck the leaves from the stems. Add the grapefruit filets and mint to the pumpkin and simmer while stirring for 3 minutes until sparkling. Stir in the citric acid.

    Skim off foam from the preserve and pour hot into tightly sealable jars. Seal the jars and place them upside down on the work surface for 10 minutes.
