- 1 Shallot
- 1 handful lemon basil
- 2 Avocados
- 1 tbsp Lemon Juice
- 100 g goat cream cheese
- Salt
- Pepper
- 8 slices baguette

Preheat oven to 200°C (400°F) with top and bottom heat.

Peel the shallot and dice finely. Rinse the lemon basil, shake dry, set aside a few leaves for garnish, finely chop the rest. Halve the avocados, remove pits, peel skins off. Cut flesh into chunks, drizzle with lemon juice, mash with fork. Mix in shallot cubes, basil, and goat cheese; season with salt and pepper.

Toast baguette slices in oven, turning once, about 5 minutes. Spread 1–2 tbsp of the avocado mixture on each slice and garnish with a basil leaf.
