Pumpkin Filo Tart

Ingredients
- 400 g filo dough
- 500 g pumpkin (peeled and seeded)
- 1 Garlic clove
- 200 g sheep cream cheese
- Sea salt
- mild paprika powder
- Cayenne pepper
- olive oil
Instructions

Butter a 26 cm springform pan.

Peel and finely chop the garlic.

Dice the pumpkin and sauté with garlic in 2 tbsp hot oil until soft; add water if needed. Remove from heat and let cool.

Crumble the sheep cheese, mix with pumpkin, season with sea salt, paprika powder, and cayenne pepper.

Brush each filo sheet with a little oil, lay two sheets together, place pumpkin filling in the center, roll into a long narrow log. Repeat with remaining dough until no filling remains. Then roll logs into a large snail shape in the springform pan, press ends tightly together. Brush with egg yolk and bake at 200°C fan for about 35 minutes until golden brown. Slice and serve.
