- 400 g puff pastry (frozen)
- 1 kg leeks
- Salt
- 200 ml whipping cream
- 3 eggs
- 200 g Feta Cheese
- 3 tbsp breadcrumbs
- pepper (ground)
- Nutmeg (freshly grated)
- butter (for the pan)
- 1 egg yolk

Let the puff pastry thaw. Preheat the oven to 180°C with upper and lower heat.

Slice the leeks lengthwise, wash, trim, and cut into 1 cm rings. Briefly blanch in boiling salted water, drain, shock in cold water, and let dry well.

Whisk the cream with the eggs. Dice the feta and mix it with the leeks and breadcrumbs. Season with salt, pepper, and nutmeg.

Roll 2/3 of the puff pastry on a floured surface slightly larger than the pan and line a buttered tart pan with it. Shape a rim and fill with the leek mixture. Spread evenly and roll the remaining pastry into a lid. Place over the leek filling. Press the edges together and brush the top with egg yolk. Bake in the preheated oven for about 45 minutes until golden yellow. Remove, cut into pieces, and serve.
