Ingredients

  • 500 g pumpkin flesh
  • juice of 2 limes
  • juice of 1 orange
  • 350 g gelatin sugar (2:1)
  • 1 packet citric acid

Instructions

    Dice the pumpkin flesh into small cubes. Mix with lime juice, orange juice and gelatin sugar in a pot. Let it steep for 30 minutes.

    Heat over medium heat for 5-8 minutes, but do not boil. Stir continuously and bring to a gentle simmer for 3 minutes. Stir in citric acid.

    Skim off foam from the preserves and pour hot into tightly sealable jars. Seal jars and place upside down on the work surface for 10 minutes.
