Pumpkin Chutney

Ingredients
- 1 pumpkin (ca. 1.2 kg)
- 1 tbsp salt
- 3 onions
- 300 g carrots
- 1 fresh red chili pepper
- 2 tbsp mustard seeds
- 1 tbsp salt
- 500 g apple cider vinegar
- 250 g jarred sugar

1. Cut the pumpkin in half and slice into wedges.

2. Remove seeds from the pumpkin wedges and peel them. Peel the carrots.

3. Grate the carrots and pumpkin wedges by hand or with a food processor.

4. Dice the onions finely. Wash, slit lengthwise, deseed, remove white membrane, and dice the chili pepper finely.

5. Place mustard seeds in a tea bag and seal tightly.

6. Combine all ingredients in a pot, add apple cider vinegar.

7. Bring to a gentle simmer while stirring, cook for about 20 minutes until pumpkin flesh is almost soft.

8. Add salt and jarred sugar, continue cooking with stirring for about 60 minutes.

9. Remove the tea bag and pour the chutney through a funnel into well-rinsed, boiled jars, seal immediately and place on the lid for 10 minutes to cool, label, and enjoy.
