Ingredients

  • 4 ripe nectarines
  • 1 cup mustard powder (ca. 100 g)
  • 5 tbsp orange zest
  • 1.5 cups cider vinegar
  • 1 tbsp sea salt
  • 0.5 lemon (juiced)

    Wash, pit, and dice the nectarines. Sauté the fruit pieces over medium heat in a pan, stirring for about 4 minutes until they release juice; then simmer on low heat for another 5 minutes.

    Whisk the mustard powder with 2½ cups water, add the orange zest, cider vinegar, and salt to the nectarines, and let it gently simmer on low heat for 90 minutes. Stir frequently so the thickening mixture doesn’t stick. When the consistency is jam-like, remove from heat, stir in lemon juice, pour hot into clean jars, seal tightly, allow to cool, then refrigerate.
