Ingredients

  • 250 g flour
  • 2 tsp Baking powder
  • 0.5 tsp Curry Powder
  • 100 g grated Parmesan
  • 100 g bacon cubes
  • 250 g peeled pumpkin flesh (e.g., muskmelon pumpkin)
  • 2 Eggs
  • 70 ml Olive oil
  • 80 ml Vegetable broth
  • 200 g Sour Cream
  • oil for the baking tray

Instructions

    Preheat the oven to 160°C fan. Oil the muffin tin cavities and set aside. Mix flour with baking powder, curry, and cheese. Briefly sauté bacon cubes and drain on kitchen paper. Dice pumpkin into small cubes and mix with bacon into the flour mixture. Whisk eggs with oil, broth, and sour cream, then quickly fold into the dry mix.

    Fill the batter into the muffin tin and bake for about 30 minutes until golden brown. Remove and let cool slightly in the tin.

    Finally lift out of the mold and serve warm or cold.
