Cheese Tart with Mushrooms

Ingredients
- 150 g flour
- 40 g grated Parmesan
- 1 egg yolk
- 75 g butter
- 1 pinch salt
- soft butter (for the tart pan)
- 20 g dried chanterelles
- 2 stalks leek
- 1 tbsp butter
- 2 tbsp breadcrumbs
- 200 g quark
- 100 g grated Parmesan
- 100 g grated Bergkäse
- 2 Eggs
- 100 ml whipping cream
- Salt
- Pepper
Instructions

Knead the flour with Parmesan, egg yolk and butter into a smooth dough. If necessary add a little cold water. Wrap in cling film and chill for about 30 minutes.

Meanwhile soak the chanterelles in warm water for about 20 minutes. Cut the leek lengthwise, wash, trim and slice into strips. Sauté in butter in a hot pan for 2-3 minutes until colorless. Remove from heat and let cool slightly.

Preheat oven to 180°C fan. Butter the tart pan.

Roll out the dough and line the pan with it. Prick the base several times with a fork and sprinkle with breadcrumbs.

Drain the chanterelles well. Whisk quark with cheeses, eggs and cream until smooth. Fold in chanterelles and leek, season with salt and pepper. Pour filling onto tart base and spread evenly. Bake in oven for about 50 minutes until golden brown.

Remove from oven and serve warm or cooled.

Serve with a spinach salad if desired.
