Fresh bacon cheese biscuits with a buttery crunch and nutty oat texture.

Ingredients

  • 1 small onion
  • 1 tsp butter
  • 25 g bacon cubes
  • 25 g grated pecorino
  • 30 g coarse oatmeal
  • 4 tbsp butter
  • 1 egg
  • 1 tsp Honey
  • 25 g fine oatmeal
  • 70 g flour

Instructions

    Peel the onion, finely dice it and sauté in hot butter until translucent; add bacon and cook briefly. Let cool slightly, then mix with cheese and coarse oatmeal.

    Whisk 4 tbsp butter with the egg until frothy; stir in honey. Add both types of oats and flour, mixing into the egg mixture. Finally fold in the oat mixture.

    Line a baking sheet with parchment paper. Drop spoonfuls of dough onto the sheet and bake at 180°C (medium) for about 12 minutes until golden brown.
