- 1 kg cleaned, seedless pumpkin flesh
- 2 untreated lemons
- 2 Cinnamon sticks
- 1 tbsp chopped ginger
- 1 kg apples
- 1 kg jelly sugar

Cut the pumpkin flesh into small pieces. Peel, quarter, core and dice the apples. Grate the lemon zest and squeeze the lemons for juice. Mix the pumpkin flesh, lemon juice, grated zest and spices in a large pot. Cook the pumpkin until almost tender in 8 minutes, then stir in apple cubes and jelly sugar, bring to a boil and simmer for about 5 minutes. Remove the cinnamon sticks and immediately fill hot-washed twist-off jars.
