Savory Vegetable Loaf

Ingredients
- 4 eggs
- 200 g quark
- 350 g flour
- Salt
- 1 yellow bell pepper
- 1 red bell pepper
- 1 small eggplant (ca. 150 g)
- 200 g Broccoli florets
- 2 tbsp Vegetable oil
- black pepper (freshly ground)
- nutmeg
- fat for greasing the pan

Preheat the oven to 200°C (400°F) with upper and lower heat. Separate the eggs; whisk the yolks over a hot, non-boiling water bath until frothy. Remove from heat and let cool slightly. Fold the quark into the sifted flour and mix well. Whisk the egg whites with a pinch of salt until stiff peaks form, then gently fold them into the quark mixture.

Wash the bell peppers, halve them, remove seeds, and slice into strips. Wash the eggplant, first cut it into thin slices and then into narrow strips. Trim the broccoli and blanch in boiling salted water for 1–2 minutes.

Heat oil in a pan, sauté the vegetables while tossing, seasoning with salt, pepper, and nutmeg. Remove from heat, let cool briefly, and fold into the batter. Pour everything into a greased loaf pan and bake in the preheated oven for 45–50 minutes until golden brown. Remove, allow to cool slightly, carefully lift out of the pan, slice, and serve.
