Ingredients

  • 500 g fresh gooseberries
  • 3 EL honey
  • 150 ml dry white wine
  • 200 ml whipping cream
  • 2 EL powdered sugar

Instructions

    Wash and rinse the gooseberries. In a pot warm the honey, add the gooseberries and simmer while stirring constantly for about 5 minutes. Deglaze with white wine and reduce for about 10 more minutes. Remove 4 gooseberries, puree the remaining compote and strain through a sieve.

    Whip the cream with powdered sugar until stiff peaks form, then fold gently into the fruit purée. Divide into four glasses and garnish each with one gooseberry before serving.
